Apple Crumble

Ingredients

10 granny smith apples (peeled/cored/large diced)

1 lemon (juice and zest)

4 tablespoons butter

½ cup brown sugar

1 teaspoon vanilla extract

1 tablespoon cinnamon (ground)

1 cup walnuts (toasted/chopped)

½ teaspoon kosher salt

 

2 ¾ cups Cup4Cup Ancient Grains flour

½ cup oats

¾ cup sugar

8 tablespoons butter (room temperature)

½ teaspoon kosher salt

2 ¾ teaspoons baking powder

Instructions

  1. Preheat oven to 350°F.
  2. Place diced apples in a large bowl.  Add lemon juice and zest, and toss to coat.
  3. Using large sauce pot, melt the first 4 tablespoons of butter on medium low heat.  Add sugar, vanilla extract, cinnamon, and salt. Stir until sugar is dissolved.
  4. Add the sliced apples and cook on medium low heat until soft and juices have reduced – approximately 15 minutes.  The result should resemble a pie filling.
  5. In a large mixing bowl combine Cup4Cup Ancient Grains flour, sugar, oats, and room temperature butter. Using your fingertips, mix until small pea sized clumps form that resemble streusel.
  6. In a large 9×13 baking dish, add ½ of streusel to form an even, unpacked layer.
  7. Add apple filling, spreading it evenly, and top with remaining streusel.
  8. Transfer to 350°F oven and bake for 35-40 minute.
