1 cup creamy peanut butter
1/2 cup brown sugar
1/2 cup honey
1/3 cup melted butter or coconut oil
2 teaspoons vanilla extract
2 1/2 cups rolled oats
1/2 cup Wholesome Cup4Cup flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/3 cup chocolate chips
1/3 cup almonds, roughly chopped
1/3 cup dried cherries
1. Preheat oven to 350°F.
2. In a bowl, mix together the peanut butter, melted butter or coconut oil, brown sugar, honey and the vanilla until smooth.
3. In a separate bowl, whisk together the oats, flour, baking soda and salt. Stir this into the peanut butter mixture until fully incorporated. Last, fold in the chocolate chips, almonds and dried cherries.
4. Firmly press the mixture into a 9” x 13” pan. Bake for 20-30 minutes. Cool completely on a wire rack before cutting. If the bar is slightly crumbly when cutting, refrigerate it until very firm and then cut. Optional: drizzle the bars with melted chocolate before serving.
