Hot Cross Buns

Ingredients

 

The Buns

2 cups (280g) Cup4Cup Flour

1 ¼ teaspoon (4g) Yeast

3 tablespoons (38g) Sugar

1 ¼ teaspoon (5g) Salt

½ cup (120g) Whole milk (warm)

6 tablespoons (85g) Butter (melted and cooled)

3 tablespoons (45g) Honey

3 Eggs (100g) large

⅓ cup (35g) Currants

½ teaspoon (1g) Cinnamon

½ teaspoon (1g) Cardamon

¼ teaspoon (.5g) Ginger

¼ teaspoon (.5g) Nutmeg

⅛ teaspoon (.5g) Clove

 

The Frosting

3 tablespoons (45g) Whole milk

1 ½ cups Powdered Sugar (150g)

1 tablespoon (18g) Cream cheese

1 teaspoon (2g) Orange zest (optional)

 

Instructions

  1. Combine all dry ingredients and spices in the bowl of a stand mixer fitted with the paddle attachment.
  2. In a separate bowl whisk together milk, 2 eggs, melted butter and honey.
  3. Using the stand mixer on low speed, slowly incorporate egg mixture into flour mix. Stop to scrape down the sides of the bowl periodically.
  4. Increase mixer to medium speed for two minutes or until the mixture becomes light and pale.
  5. Scrape down the bowl again, add currants and incorporate into a dough ball-cover with wrap.
  6. Proof until doubled in size, about 1 hour.
  7. Spray a round 9-inch cake mold and a clean surface with nonstick spray.
  8. Using a large portion scoop, portion dough into 10 equal size balls.
  9. Lightly spray your hands with nonstick spray (to help prevent the dough from sticking) and form the dough into round balls. Place 7 balls around the cake pan and 3 in the center.
  10. Lightly cover the dough and Proof until doubled in size. About an hour-preheat oven to 400°
  11. Brush the tops of the roll with the egg wash. To make the egg wash, break 1 egg into a small bowl and whip with a fork or small whisk to combine the white and yolk well.
  12. Place in the oven and bake for 10-12 minutes or until golden brown.
  13. For the icing, whisk milk, cream cheese, powdered sugar and orange zest together. Place mixture in a pastry bag.
  14. Once buns are cooled. Pipe a cross onto each roll.
